This is a delicious cookie, great for holiday parties or sharing with neighbors, or for a grain-free treat anytime of the year.
Almond Butter Cookies with Dark Chocolate Drizzle
- 1 egg
- 3/4 c. almond butter
- 1/2 c. coconut sugar
- 1 tsp vanilla
- 1 tbsp melted coconut oil + more for drizzle
- 1 c. almond flour/almond meal
- 1/8 tsp sea salt
- dark chocolate bar or high quality dark chocolate chips (for drizzle)
Preheat the oven to 350. Blend egg, almond butter, sugar, vanilla and oil well. Stir in almond flour and salt until well mixed.
Roll the dough into balls and place on trays lined with parchment or wax paper. Press each with a fork to flatten and bake for 12-14 minutes or until lightly brown and no longer soft.
While the cookies cool, melt 1 tsp coconut oil with most of a dark chocolate bar, broken into pieces (or 1/2 c. dark chocolate chips). Stir until completely melted and drizzle over the cooled cookies.
