Valentine's day is coming which means an excuse to eat chocolate! Although any day is a good day for dark chocolate in my opinion.
These are a staple in our house.With only four ingredients, they are an easy way to have a sweet treat without added flour, sugar or oil.
However, they are still quite sweet form the dates and should be eaten in moderation. Sometimes it’s easy for us to overeat a “healthy” dessert when the calorie content and sugar breakdown is often quite similar to a traditional cookie.
Chocolate Chip Cookie Dough Bites
1 c. dates, pitted
1 c. pecans or cashews
Splash of vanilla
Mini chocolate chips (about ¼- ½ c.)
Blend the dates and nuts in a food processor until well chopped and beginning to stick together. Add about a teaspoon of vanilla and blend again.
Stir in the mini chocolate chips and roll into balls. Enjoy!
