Winter is the ideal time to make stew and soups. Our bodies crave warming, cooked vegetables, more meat and more fat in the winter time.
This is a great, simple recipe for an delicious lunch or dinner, packed with greens.
Chicken Sausage, Kale and Tomato Stew
Ingredients (4-6 servings)
1 onion, diced
1 tbsp olive oil
1 lb chicken sausage, sliced
2 c. fresh kale
3 c. chicken broth
2-3 c. soaked and cooked mixed beans, or 2 cans of white beans
1 can diced tomatoes
sea salt and pepper to taste
In a large pot, saute onion in olive oil 5 minutes. Add sausage and saute another 5 minutes.
Add chicken broth, kale, beans and diced tomatoes and bring to a boil and then simmer 15-20 minutes. Add salt and pepper to taste. Enjoy!
