Quick Lemon Tahini Broccoli Slaw Salad Jars

Meal prep is the key to a successful week of healthy, delicious food, isn't it? Otherwise, it is just too easy to grab the fastest thing we can find.

Since we are drawn to short cuts, make your lunch decisions easier by stocking your fridge with these fast mason jar salads.

By layering the dressing on the bottom, they keep well for up to 4-5 days. When you're ready to eat, simply dump the jar contents into a bowl and mix it well.

Dressing Ingredients 1/3 cup Tahini 2 Lemons (juiced) 1/2 tsp Sea Salt 2 tbsps Water

Salad Ingredients

3 cups Cabbage, (chopped) or prepared broccoli kale slaw (Trader Joe's has a good option) 3 cups Chickpeas (cooked or from the can) 1 cup Cherry Tomatoes 1 cup Carrots, shredded or in matchsticks 1 Yellow Bell Pepper (chopped) 3 cups Purple Cabbage (chopped)

optional leftover chicken, salmon, turkey sausage or fish for extra protein

Directions Make the dressing by combing the tahini, lemon juice, and sea salt. Whisk until combined, adding water as needed for a creamy consistency. Layer the dressing at the bottom of 4 Mason jars.

Layer the optional chicken or extra protein, chickpeas, tomatoes, carrots, bell pepper, and top with the slaw. Cover and store in the fridge.

Another great Mason jar option is to layer quinoa or bulghur, tomatoes, lettuce, red onion, avocado, tofu and pumpkin seeds. There are endless possibilities!

Enjoy a fast, healthy lunch or side dish for the week!

Note: If you don't have tahini, you can also try this dressing with nut butter and swap the lemon juice for fresh lime juice.
