Fall Sweet Potato, Kale and Feta Side Salad


As the weather gets cooler, raw salads become less appealing but there are many ways to get in delicious side salads with steamed or roasted veggies.

This is one of my favorite side dishes in the cooler months, combining fall produce: sweet potatoes and kale.

Sweet Potato, Kale & Feta Salad

Ingredients

2-3 Sweet Potatoes (diced into 1 inch cubes)

4 cups Kale Leaves

2 stalks Celery, diced

2 tbsps Balsamic Vinegar

1 tbsp Maple Syrup

1 tbsp Extra Virgin Olive Oil

1 tbsp Dijon Mustard

Sea Salt & Black Pepper (to taste)

1/4 cup Feta Cheese (crumbled)

Directions Steam sweet potato cubes over 1 inch of boiling water in a saucepan for 10-12 minutes, or until cooked but not too soft.

Toss the warm sweet potatoes with kale in a large bowl to gently wilt the kale. In a small bowl, combine the oil, balsamic vinegar, maple syrup, mustard and salt and pepper for the dressing and mix well.

Combine the kale and sweet potatoes with the dressing and add the feta and celery. Serve as a side salad with fish or chicken, or add chickpeas for a balanced lunch.
